  • 1/2 cup light brown sugar
  • 3 tbsp hot honey
  • 3 medium ripe peaches
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup neutral oil
  • for serving vanilla ice cream

Instructions

  1. 1Preheat the oven to 350°F and place a 10-inch cast-iron skillet on the stovetop over medium heat.
  2. 2Melt the butter in the skillet until foaming, then stir in the brown sugar and hot honey until the mixture looks glossy and just starts to bubble at the edges.
  3. 3Remove the skillet from heat. Pit and slice the peaches into thick wedges, then arrange them in a snug single layer over the hot honey caramel, cut sides down.
  4. 4In a medium bowl whisk together the flour, baking powder, and salt until evenly combined.
  5. 5In a large bowl beat the granulated sugar with the eggs and vanilla until pale and slightly thickened, about 1 minute by hand.
  6. 6Stream in the milk and oil while whisking, then fold the dry mixture in gently just until no dry streaks remain; the batter should be smooth and pourable.
  7. 7Carefully spoon the batter over the peaches in the skillet, spreading it evenly to the edges without disturbing the fruit layer.
  8. 8Bake on the center rack for 28 to 34 minutes until the top is deep golden, the center springs back when lightly pressed, and a toothpick inserted in the cake (not fruit) comes out clean.
  9. 9Let the skillet cool on a rack for 8 to 10 minutes so the caramel sets slightly but is still loose enough to release.
  10. 10Run a thin knife the edge, invert a large plate over the skillet, and flip in one confident motion; lift the skillet away slowly.
  11. 11If any peach slices stick, lift them back into place with a spatula and drizzle any remaining skillet caramel over the top.
  12. 12Serve warm wedges with a scoop of vanilla ice cream so the hot honey caramel melts into a glossy sauce.
