- 4 large ripe peaches
- 1 tbsp neutral oil
- 1/3 cup hot honey
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp kosher salt
- 6 tbsp cold unsalted butter
- 3/4 cup cold buttermilk
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp flaky sea salt
Instructions
- 1Preheat a gas or charcoal grill to medium-high heat, about 400°F, and place a 10-inch cast-iron skillet on the grates to heat for 5 minutes. Halve and pit the peaches, then brush the cut sides lightly with oil.
- 2Grill the peach halves cut-side down for 3 to 4 minutes until deep grill marks appear and the flesh softens and caramelizes at the edges. Flip and grill 1 minute more, then transfer to a plate.
- 3In a large bowl whisk together the flour, granulated sugar, baking powder, and kosher salt. Cut the cold butter into small cubes and work it into the dry mixture with your fingertips until pea-sized crumbs form.
- 4Pour in the cold buttermilk and stir gently with a fork just until a shaggy dough comes together; do not overmix. Turn the dough onto a lightly floured surface and pat into a ¾-inch-thick round.
- 5Cut six biscuits with a 2½-inch cutter, gathering scraps once. Carefully place the biscuits into the hot cast-iron skillet on the grill, close the lid, and bake 12 to 14 minutes until golden brown and cooked through.
- 6While the biscuits bake, whip the heavy cream with powdered sugar and vanilla until soft peaks form; keep chilled. Warm the hot honey in a small saucepan or microwave-safe cup until pourable.
- 7Slice the grilled peaches into wedges. Split the warm biscuits horizontally and place the bottoms on serving plates.
- 8Spoon whipped cream over each biscuit bottom, pile on the warm peach wedges, drizzle generously with hot honey, and finish with flaky sea salt. Cap with biscuit tops and serve immediately while the fruit is still juicy and the biscuits steamy.
