Ingredients

  • 4 ripe nectarines, halved and pitted
  • 1 tbsp neutral oil
  • 1/4 cup hot honey
  • 2 cups vanilla ice cream
  • 1/3 cup toasted pecans, chopped
  • 1/4 tsp sea salt
  • 8 fresh mint leaves
  • 1/4 cup graham cracker crumbs

Instructions

  1. 1Preheat a grill or grill pan to medium-high heat, about 400°F.
  2. 2Brush the cut sides of the nectarine halves lightly with oil so they do not stick.
  3. 3Place the nectarines cut-side down on the hot grates and grill 3 to 4 minutes until deep grill marks appear and the fruit softens slightly.
  4. 4Flip and grill the skin side another 2 minutes just to warm through.
  5. 5Transfer the grilled nectarines to a platter and immediately drizzle with most of the hot honey so it soaks into the warm fruit.
  6. 6Place two nectarine halves in each serving bowl.
  7. 7Add a generous scoop of vanilla ice cream beside or on top of the fruit.
  8. 8Sprinkle with toasted pecans, sea salt, and graham cracker crumbs for crunch.
