Instructions

  1. 1Preheat the oven to 350°F and grease a standard loaf pan, then line it with a parchment sling so the cake lifts out cleanly later.
  2. 2Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt together in a medium bowl until the spices look evenly distributed.
  3. 3In a large bowl, beat the softened butter with both sugars until the mixture turns pale and fluffy, about 2 to 3 minutes with a hand mixer.
  4. 4Beat in the eggs one at a time, scraping the bowl between additions, then mix in the vanilla until the batter smells fragrant.
