Ingredients
- 4 medium ripe peaches
- 3 medium ripe nectarines
- 4 medium plums
- 2 tbsp neutral oil for grilling
- 1.5 quarts vanilla ice cream
- 1/3 cup honey
- 1 tbsp fresh lemon juice
- 1/2 tsp ground cinnamon
- 3/4 cup chopped toasted pecans
- 1 cup crumbled shortbread cookies
- 1/4 cup fresh mint leaves
- 2 cups whipped cream
- 1/2 cup caramel sauce
- 1/2 tsp flaky sea salt
Instructions
- 1Preheat a clean gas or charcoal grill to medium heat, aiming for steady heat around 400°F, and oil the grates lightly so fruit will not stick. While the grill heats, halve and pit the peaches, nectarines, and plums, then brush the cut sides lightly with oil.
- 2Stir the honey with lemon juice and cinnamon in a small bowl until smooth; set this glaze near the grill for quick basting. Arrange the fruit cut-side down on the hot grates and close the lid.
- 3Grill without moving for 3 to 4 minutes until deep grill marks appear and the fruit softens slightly at the edges. Flip carefully with tongs, brush the marked sides with the honey glaze, and grill another 2 to 3 minutes until juicy and fragrant.
- 4Transfer grilled fruit to a cutting board and let cool just until safe to handle, about 5 minutes. Slice into thick wedges, keeping some halves whole for a dramatic board look.
- 5Scoop vanilla ice cream into a chilled bowl or keep the carton nested in ice so it stays scoopable on the table. Warm the caramel sauce briefly if it is thick so it drizzles easily.
