  • 1 large fresh pineapple
  • 3 Tbsp unsalted butter
  • 3 Tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup hot honey
  • 2 cups vanilla ice cream
  • 1/3 cup toasted coconut flakes
  • 1/4 cup chopped roasted peanuts
  • 4 lime wedges
  • 1/2 tsp flaky sea salt

Instructions

  1. 1Heat a gas or charcoal grill to medium-high, about 400°F, and oil the grates lightly. Cut the pineapple into four long wedges, leaving the core intact as a handle if desired, and pat the cut faces dry.
  2. 2Melt the butter and stir in the brown sugar and cinnamon until a thick glaze forms. Brush the glaze generously over the cut sides of each pineapple wedge.
  3. 3Place the wedges cut-side down on the hot grill. Cook undisturbed 3 to 4 minutes until deep grill marks appear and the sugars begin to caramelize without burning.
