  • 4 large ripe nectarines
  • 2 cups all-purpose flour
  • 1/3 cup plus 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • 6 tbsp cold unsalted butter
  • 3/4 cup buttermilk
  • 1 1/2 cups heavy whipping cream
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract

Instructions

  1. 1Preheat a gas or charcoal grill to medium-high heat, about 400°F, and lightly oil the grates.
  2. 2In a large bowl whisk flour, sugar, baking powder, and salt; cut in the cold butter with a pastry blender or fingertips until pea-sized crumbs form.
  3. 3Stir in the buttermilk just until a shaggy dough comes together; turn onto a floured surface, pat into a 1-inch-thick round, and cut into 6 biscuits with a floured cutter.
  4. 4Place biscuits on a parchment-lined sheet and chill 10 minutes while you prep the fruit.
  5. 5Halve and pit the nectarines, then toss the cut sides with the remaining sugar so they will caramelize.
  6. 6Grill the nectarine halves cut-side down until deep grill marks appear and the fruit softens slightly, 3 to 4 minutes; flip briefly just to warm the skins, then transfer to a plate.
