Ingredients
- 1 1/2 cups seedless red grapes
- 2 medium tart apples (Granny Smith)
- 3/4 cup rolled oats
- 1/4 cup whole-wheat flour
- 3 tbsp coconut oil, melted
- 3 tbsp brown sugar
- 3/4 tsp ground cinnamon
- 1 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- 1/8 tsp pinch of salt
- 8 leaves fresh basil leaves for garnish
Instructions
- 1Preheat the oven to 375°F. Lightly grease four oven-safe ramekins or small baking cups and set them on a rimmed sheet pan for easy handling.
- 2Core and dice the apples into small cubes. Halve the grapes. Toss both fruits with lemon juice and a little cinnamon in a bowl so they stay bright and lightly spiced.
- 3Divide the fruit mixture evenly among the prepared ramekins, packing it gently so each cup is three-quarters full.
- 4In another bowl combine the oats, whole-wheat flour, brown sugar, remaining cinnamon, salt, melted coconut oil, and vanilla. Stir until the mixture forms moist, sandy clumps.
- 5Spoon the crumble topping over each fruit cup, covering the surface without pressing down hard. Leave a few fruit pieces peeking out for color.
- 6Bake for 18 to 22 minutes until the topping is golden and crisp and the fruit juices bubble gently the edges. The kitchen will smell like warm cinnamon and baked apple.
- 7Remove the sheet pan from the oven and let the cups cool for 5 to 8 minutes so they are safe to handle yet still warm.
- 8Just before serving, tear a few fresh basil leaves and place one or two on each cup; the herbal note lifts the sweetness and keeps the dessert produce-forward.
- 9Serve the individual cups as-is for portion control or pack cooled leftovers for next-day meal-prep treats. They reheat beautifully in a 300°F oven for a few minutes.
