  • 1 cup fresh sweet corn kernels
  • 2 large ripe peaches, sliced
  • 1/3 cup light brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup whole milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions

  1. 1Preheat the oven to 375°F. Place a 10-inch cast-iron skillet on the stovetop over medium heat.
  2. 2Melt half the butter in the skillet, then add the fresh corn kernels and cook, stirring, until lightly golden and fragrant, about 3 minutes.
  3. 3Add the peach slices and brown sugar; cook another 2 minutes until the fruit begins to soften and release juices that bubble gently.
  4. 4Remove the skillet from heat and arrange the peaches and corn in an even single layer across the bottom.
  5. 5In a mixing bowl whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until evenly combined.
