Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup semisweet chocolate chips
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/3 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp fine salt
  • 2 cups mini marshmallows
  • 8 graham cracker squares, broken
  • 1/4 cup extra chocolate chips for topping

Instructions

  1. 1Preheat the oven to 350°F. Place a 10-inch cast-iron skillet over low heat and add the butter and chocolate chips. Stir until melted and smooth, then remove from heat and let cool 3 minutes.
  2. 2Whisk the sugar into the warm chocolate mixture until glossy. Add the eggs one at a time, whisking vigorously after each until fully incorporated and the batter looks shiny. Stir in the vanilla.
  3. 3Sift the flour, cocoa powder, and salt directly into the skillet. Fold with a spatula just until no dry streaks remain; the batter will be thick and fudgy.
  4. 4Smooth the top and scatter half the mini marshmallows and the extra chocolate chips evenly over the surface. Bake on the center rack for 12 minutes.
  5. 5Remove the skillet carefully (handle will be hot). Top with the remaining marshmallows in an even layer. Return to the oven for 6–8 more minutes until the marshmallows are puffed and golden in spots and the edges of the brownie are set but the center is still soft.
  6. 6Optional but recommended: switch the oven to broil on high for 30–60 seconds to toast the marshmallow tops deeply—watch constantly so they do not burn.
  7. 7Let the skillet rest on a heat-safe surface for 5 minutes so the dip thickens slightly. Nestle broken graham cracker pieces the edges or serve them on the side for scooping.
  8. 8Bring the hot skillet to the table with extra graham crackers and spoons. Scoop while warm for the ultimate gooey s’mores experience.
