  • 6 medium ripe peaches
  • 10 tbsp unsalted butter
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 tbsp fresh lemon juice
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/2 tsp kosher salt

Instructions

  1. 1Preheat the oven to 375°F and place a 10-inch cast-iron skillet on the stovetop over medium heat. Add the butter and cook, swirling often, until it foams, turns deep golden, and smells nutty, about 4 to 5 minutes; pour most of the brown butter into a mixing bowl, leaving a thin film in the skillet.
  2. 2Pit and slice the peaches into thick wedges while the butter browns, then tip them into the warm skillet. Sprinkle the cornstarch, half the brown sugar, the lemon juice, cinnamon, and half the vanilla over the fruit and toss gently until the peaches look glossy and coated.
  3. 3In the bowl with the reserved brown butter, stir in the remaining brown sugar, granulated sugar, oats, flour, pecans, salt, and remaining vanilla until the mixture forms damp, clumpy streusel.
  4. 4Scatter the streusel evenly over the peaches so some fruit still peeks through; do not pack it down.
  5. 5Transfer the skillet to the oven and bake until the topping is deeply golden and the fruit juices bubble thickly the edges, 28 to 35 minutes.
