  • 6 medium ripe peaches
  • 10 tbsp unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 tbsp fresh lemon juice
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 tsp kosher salt
  • 3/4 cup whole milk
  • for serving vanilla ice cream

Instructions

  1. 1Preheat the oven to 375°F and place a 10-inch cast-iron skillet on the stovetop over medium heat. Add most of the butter and cook, swirling often, until the milk solids turn deep golden and the butter smells nutty, about 4 to 5 minutes; pour the browned butter into a heatproof bowl and set aside, leaving a thin film in the skillet.
  2. 2While the butter browns, pit and slice the peaches into thick wedges; no need to peel if the skins are tender. Toss the peach wedges in a large bowl with both sugars, lemon juice, cornstarch, cinnamon, and half the vanilla until evenly coated and juicy.
  3. 3Return the skillet to medium heat and scrape in the peach mixture. Cook, stirring gently once or twice, until the fruit begins to release juices and the edges look syrupy, about 4 minutes; remove from heat.
  4. 4In a medium bowl whisk together the flour, baking powder, and salt. Drizzle in the reserved brown butter (reserve a spoonful for brushing) and the milk plus remaining vanilla; stir just until a shaggy, sticky dough forms—do not overmix.
  5. 5Drop large spoonfuls of the biscuit dough evenly over the hot peaches, leaving small gaps so steam can escape. Brush the biscuit tops lightly with the reserved brown butter.
  6. 6Transfer the skillet to the oven and bake until the biscuits are deep golden, cooked through, and the peach juices bubble thickly the edges, 28 to 32 minutes.
  7. 7Cool the cobbler on a wire rack for at least 15 minutes so the filling can set slightly; the biscuits will stay crisp on top while the bottoms soak up syrup.
  8. 8Scoop warm portions into bowls, making sure each serving gets fruit and biscuit. Top with a scoop of vanilla ice cream so it melts into the brown-butter juices and serve immediately.
