- 1 medium zucchini
- 4 tbsp unsalted butter
- 1/2 cup light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp fine salt
- 1/4 tsp ground cinnamon
- 1/2 cup mini chocolate chips
- as needed cooking spray
Instructions
- 1Grate the zucchini on the large holes of a box grater, then wrap it in a clean kitchen towel and squeeze firmly over the sink until most liquid is removed.
- 2Melt the butter and let it cool slightly, then whisk it with the brown sugar in a bowl until glossy.
- 3Beat in the egg and vanilla until the mixture looks smooth and slightly thickened.
- 4Stir together the flour, baking powder, salt, and cinnamon, then fold the dry ingredients into the wet mixture just until combined.
- 5Fold in the squeezed zucchini and most of the mini chocolate chips, reserving a small handful for the tops.
- 6Lightly mist silicone muffin cups or an air-fryer-safe mini muffin pan with cooking spray and portion the thick batter evenly, two-thirds full.
- 7Press the remaining chocolate chips onto the tops of each bite.
- 8Air-fry at 320°F for 10–13 minutes, checking at the 10-minute mark, until the tops are set, golden at the edges, and a toothpick inserted in the center comes out mostly clean.
- 9Cool in the pan 5 minutes, then transfer the bites to a rack so the bottoms stay crisp rather than steamy.
- 10Serve warm or at room temperature; leftovers keep in an airtight container up to two days.
