Ingredients

  • 2 cups full-fat cottage cheese
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup granola
  • 1 tbsp chia seeds
  • 2 tbsp toasted sliced almonds
  • 1 pinch pinch of flaky sea salt

Instructions

  1. 1Add the cottage cheese, honey, and vanilla extract to a food processor or high-speed blender. Blend on high for 45–60 seconds, scraping down the sides once, until the mixture is completely smooth, thick, and whipped like soft frosting.
  2. 2Taste and adjust sweetness with an extra drizzle of honey if needed; the texture should hold soft peaks when you lift the spoon.
  3. 3Divide the whipped cottage cheese evenly between two shallow bowls, using the back of a spoon to create a slight well in the center of each.
  4. 4Arrange the sliced strawberries and blueberries over the cottage cheese in neat clusters so every bite gets fruit.
  5. 5Sprinkle granola over each bowl, then dust with chia seeds and toasted sliced almonds for crunch.
  6. 6Finish each bowl with a tiny pinch of flaky sea salt to balance the sweetness and make the honey pop.
  7. 7Serve immediately while the granola is still crisp; if prepping ahead, keep the whipped base covered in the fridge up to 2 days and add toppings just before eating.
