Ingredients
- 2 cups full-fat cottage cheese
- 2 tbsp honey
- 1 tsp vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup fresh blueberries
- 1/2 cup granola
- 1 tbsp chia seeds
- 2 tbsp toasted sliced almonds
- 1 pinch pinch of flaky sea salt
Instructions
- 1Add the cottage cheese, honey, and vanilla extract to a food processor or high-speed blender. Blend on high for 45–60 seconds, scraping down the sides once, until the mixture is completely smooth, thick, and whipped like soft frosting.
- 2Taste and adjust sweetness with an extra drizzle of honey if needed; the texture should hold soft peaks when you lift the spoon.
- 3Divide the whipped cottage cheese evenly between two shallow bowls, using the back of a spoon to create a slight well in the center of each.
- 4Arrange the sliced strawberries and blueberries over the cottage cheese in neat clusters so every bite gets fruit.
- 5Sprinkle granola over each bowl, then dust with chia seeds and toasted sliced almonds for crunch.
- 6Finish each bowl with a tiny pinch of flaky sea salt to balance the sweetness and make the honey pop.
- 7Serve immediately while the granola is still crisp; if prepping ahead, keep the whipped base covered in the fridge up to 2 days and add toppings just before eating.
- 8For extra protein, stir 1 scoop unflavored or vanilla collagen into the blender with the cottage cheese before whipping.
