Ingredients

  • 1 cup whole-milk cottage cheese
  • 4 thick sourdough bread slices
  • 2 tbsp hot honey
  • 3 tbsp roasted salted pistachios, roughly chopped
  • 1 cup fresh strawberries, sliced
  • 1 tsp lemon zest
  • 1 tsp extra-virgin olive oil
  • 1/4 tsp flaky sea salt
  • to taste freshly cracked black pepper

Instructions

  1. 1Add the cottage cheese to a food processor or blender and blend on high for 45–60 seconds until completely smooth, thick, and whipped like ricotta; scrape down the sides once halfway through.
  2. 2Toast the sourdough slices in a toaster or in a dry skillet over medium heat for 2–3 minutes per side until deep golden and crisp at the edges.
  3. 3While the bread toasts, slice the strawberries and roughly chop the pistachios so everything is ready for assembly.
  4. 4Drizzle each warm toast lightly with the olive oil, then immediately spread a generous layer of the whipped cottage cheese over each slice, dividing it evenly.
  5. 5Arrange the sliced strawberries over the cottage cheese, then drizzle each toast with hot honey so it pools slightly into the cheese.
  6. 6Scatter the chopped pistachios over the top, then finish with lemon zest, flaky sea salt, and a few cracks of black pepper.
  7. 7Serve immediately while the toast is still warm and crisp so the contrast with the cool whipped cheese stays sharp.
  8. 8If prepping ahead, whip the cottage cheese up to 2 days in advance and store covered in the fridge; assemble just before eating.
