Ingredients
- 2 cups full-fat cottage cheese
- 1/2 cup plain Greek yogurt
- 3 Tbsp, plus more for drizzling honey
- 1 tsp vanilla extract
- 1 cup, hulled and sliced fresh strawberries
- 1 cup fresh blueberries
- 3/4 cup fresh raspberries
- 1 cup granola
- 2 Tbsp chia seeds
- 1/4 cup toasted sliced almonds
- 1 tsp lemon zest
Instructions
- 1Add the cottage cheese, Greek yogurt, honey, vanilla extract, and lemon zest to a food processor or high-speed blender. Blend 45–60 seconds, scraping down the sides once, until the mixture is completely smooth, thick, and mousse-like with no curds remaining.
- 2Taste the whipped base and add an extra teaspoon of honey if you prefer it sweeter; it should taste lightly sweet and tangy.
- 3In a small bowl gently toss the sliced strawberries, blueberries, and raspberries together so the juices begin to mingle.
- 4Spoon whipped cottage cheese into the bottom of each of four glasses or jars. Top with a layer of mixed berries, then a generous sprinkle of granola and chia seeds.
- 5Repeat the layers once more, finishing with a final dollop of whipped cottage cheese, remaining berries, granola, and the toasted almonds.
- 6Drizzle each parfait lightly with extra honey. If prepping ahead, keep granola separate and add it just before eating so it stays crunchy.
- 7Chill the assembled parfaits at least 10 minutes (or up to overnight without granola) so the flavors marry and the chia softens slightly.
- 8Serve cold with a long spoon; the contrast of creamy whipped cheese, juicy berries, and crunchy granola should feel like dessert for breakfast.
