Ingredients

  • 16 oz (2 cups) hot strong brewed coffee
  • 2 scoops (about 50 g) vanilla whey protein powder
  • 1/2 cup unsweetened almond milk
  • 1 cup ice cubes
  • 2 cups liquid egg whites
  • as needed nonstick cooking spray
  • 1/2 tsp everything bagel seasoning or black pepper
  • 1 tbsp (optional) fresh chives, snipped

Instructions

  1. 1Brew the coffee fresh and hot, then let it cool for 2 to 3 minutes so it will not scorch the protein powder.
  2. 2Add the protein powder and almond milk to a blender, pour in the warm coffee, and blend on medium speed until completely smooth and frothy, about 20 seconds.
  3. 3Fill two tall glasses halfway with ice and pour the proffee over the ice, dividing evenly; stir once more if any foam settles.
  4. 4While the drinks chill, heat a large nonstick skillet over medium-low heat and mist lightly with cooking spray.
  5. 5Pour in the liquid egg whites and let them sit undisturbed for 30 seconds until the edges begin to turn opaque.
  6. 6Gently push and fold the whites with a silicone spatula, cooking slowly until they form soft, moist curds with no liquid remaining, about 3 to 4 minutes total; avoid high heat so they stay tender.
  7. 7Season the finished egg whites with everything bagel seasoning or black pepper and scatter chives over the top if using.
  8. 8Divide the egg whites between two plates or shallow bowls and serve immediately alongside the iced proffee.
  9. 9Sip the proffee and eat the egg whites together for a complete ultra-high-protein, low-calorie morning plate that keeps you full until lunch.
