Ingredients

  • 1 1/2 cups (from about 10 large eggs) egg whites
  • 2 large whole-wheat lavash or low-carb wraps
  • 1 cup cherry tomatoes
  • 2 cups baby spinach
  • 1/2 medium cucumber
  • 1/4 small red onion
  • 1/4 cup crumbled feta
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • as needed olive oil spray
  • 1/4 cup plain nonfat Greek yogurt

Instructions

  1. 1Halve the cherry tomatoes, thinly slice the cucumber and red onion, and keep the spinach leaves whole so they wilt gently later.
  2. 2Heat a nonstick skillet over medium heat and mist lightly with olive oil spray.
  3. 3Pour in the egg whites, season with salt, pepper, and oregano, and scramble gently, pushing from the edges toward the center until soft curds form and no liquid remains, about 3 to 4 minutes.
  4. 4In the last 30 seconds of cooking, fold the baby spinach into the eggs so it just wilts from residual heat without turning soggy.
  5. 5Warm the lavash or wraps for 20 seconds in a dry pan or microwave so they become pliable and less likely to crack.
  6. 6Spread a thin layer of Greek yogurt down the center of each wrap as a creamy base that also helps hold the filling.
  7. 7Divide the scrambled egg whites and wilted spinach between the two wraps, then top with cherry tomatoes, cucumber slices, red onion, and crumbled feta.
  8. 8Drizzle each with a little fresh lemon juice for brightness and a final crack of black pepper.
  9. 9Fold the sides of each wrap inward, then roll tightly from the bottom up like a burrito so nothing spills.
