Ingredients

  • 1 lb turkey breakfast sausage
  • 1 can (15 oz), drained and rinsed canned white beans
  • 4 large eggs
  • 4 cups baby spinach
  • 1 cup diced red bell pepper
  • 3/4 cup diced onion
  • 2 cloves minced garlic
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. 1Heat a large deep skillet or sauté pan over medium-high heat and add the olive oil. Crumble the turkey sausage into the pan and cook, breaking it apart, until browned and cooked through, about 6 to 7 minutes.
  2. 2Push the sausage to one side of the pan. Add the diced onion and red bell pepper to the empty space and cook until softened and lightly caramelized, about 4 minutes.
  3. 3Stir the vegetables into the sausage, then add the minced garlic, smoked paprika, oregano, salt, and black pepper. Cook 30 seconds until the garlic is fragrant.
  4. 4Add the drained white beans and baby spinach. Stir gently until the spinach wilts completely and the beans are heated through, about 2 to 3 minutes.
  5. 5Create four small wells in the mixture with the back of a spoon. Crack one egg into each well.
  6. 6Reduce heat to medium-low, cover the skillet with a lid, and cook until the egg whites are set but the yolks are still runny or soft-set to your preference, 4 to 6 minutes.
  7. 7Remove the lid, sprinkle the shredded cheddar evenly over the top, and let it melt for 1 minute off the heat.
  8. 8Garnish with chopped green onions, divide into four bowls, and serve hot. For meal prep, portion the sausage-bean base without eggs and cook fresh eggs when reheating.
