Ingredients
- 6 large flour tortillas
- 12 oz breakfast sausage links
- 10 large eggs
- 1 1/2 cups shredded cheddar cheese
- 1 large red bell pepper
- 1 large green bell pepper
- 1 medium yellow onion
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- for serving salsa or hot sauce
Instructions
- 1Dice the onion and both bell peppers into small, even pieces so they cook quickly and nestle neatly inside the wraps. Set a large nonstick skillet over medium heat and warm the olive oil until it shimmers.
- 2Add the sausage links and cook, turning occasionally, until browned on all sides and cooked through, about 8 to 10 minutes. Transfer to a cutting board, let rest a minute, then slice into thin coins.
- 3In the same skillet, add the diced onion and peppers. Season with salt, black pepper, and garlic powder. Sauté, stirring often, until the vegetables soften and the edges pick up light golden color, 6 to 8 minutes.
- 4Crack the eggs into a bowl and whisk until the yolks and whites are fully blended and slightly frothy. Push the vegetables to one side of the skillet, pour in the eggs, and scramble gently over medium-low heat until just set and still glossy, about 3 to 4 minutes.
- 5Fold the sausage coins back into the egg-and-pepper mixture so everything is evenly distributed. Taste and adjust seasoning if needed, then remove the skillet from the heat.
- 6Warm the tortillas one at a time in a dry skillet or microwave until pliable so they will not crack when rolled. Working quickly, spoon a generous portion of the filling down the center of each tortilla and top with shredded cheddar.
- 7Fold in the sides, then roll tightly from the bottom up to form snug burritos. For freezer prep, wrap each burrito individually in foil or parchment, then place in a freezer bag.
- 8To reheat from frozen, microwave unwrapped for 90 seconds to 2 minutes, flipping halfway, or bake foil-wrapped at 350°F for 20 to 25 minutes until hot in the center. Serve with salsa or hot sauce on the side for a grab-and-go morning.
