Ingredients

  • 3 large, cored and sliced 1/4-inch Honeycrisp apples
  • 1 1/2 cups old-fashioned rolled oats
  • 4 tbsp unsalted butter
  • 1/3 cup brown sugar
  • 3 tbsp pure maple syrup
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp kosher salt
  • 1/2 cup chopped pecans
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt
  • 1/2 cup whole milk

Instructions

  1. 1Place a 10-inch cast-iron or heavy skillet over medium heat and melt half the butter until it foams and smells nutty, about 2 minutes. Add the sliced Honeycrisp apples and cook, stirring occasionally, until they soften and the edges turn golden and caramelized, 6 to 8 minutes.
  2. 2Sprinkle half the brown sugar, the cinnamon, nutmeg, and salt over the apples. Stir and continue cooking until the sugar melts into a glossy syrup that coats the fruit, another 2 minutes. Splash in a tablespoon of water if the pan looks dry so the apples stay juicy.
  3. 3Push the apples to one side. Add the remaining butter to the empty space and let it melt. Stir in the rolled oats and chopped pecans, toasting them in the butter until fragrant and lightly golden, 3 to 4 minutes.
  4. 4Drizzle the maple syrup and vanilla over the oat mixture, then fold the apples back through everything so the fruit and crunchy topping mingle. Pour the milk the edges and simmer gently 2 minutes until the oats absorb most of the liquid and thicken into a spoonable crisp.
  5. 5Taste and adjust sweetness or cinnamon if desired. Remove the skillet from heat and let it rest 3 minutes so the topping firms slightly while still warm.
  6. 6Spoon generous portions into bowls, making sure each serving gets both soft apples and crunchy oat-pecan clusters. Top each bowl with a dollop of cold Greek yogurt for creamy contrast.
  7. 7Finish with an extra drizzle of maple syrup and a light dusting of cinnamon. Serve immediately while the skillet is still warm for the best texture contrast between crisp topping and tender fruit.
  8. 8Leftovers reheat beautifully in the same skillet over low heat with a splash of milk the next morning.
