  • 2 medium Honeycrisp apples

Instructions

  1. 1Preheat the oven to 375°F. In a 10- or 12-inch oven-safe skillet, cook the breakfast sausage over medium heat, breaking it into bite-size crumbles until browned and cooked through, about 6 to 7 minutes; transfer to a plate leaving the drippings.
  2. 2Add butter to the same skillet, then stir in diced onion and cook until translucent and starting to sweeten, about 3 minutes.
  3. 3Core and slice the Honeycrisp apples into thin wedges and add them to the skillet along with the fresh corn; sauté 4 to 5 minutes until the apples soften at the edges and the corn brightens.
  4. 4Return the sausage to the pan, sprinkle in the chopped sage, and drizzle the maple syrup over everything; toss to coat and season with salt and pepper.
