Ingredients
- 4 large eggs
- 2 slices thick-sliced sourdough bread
- 2 ripe avocados
- 1 Tbsp fresh lemon juice
- 3/4 tsp, divided kosher salt
- 1/4 tsp freshly ground black pepper
- 2 Tbsp chili crisp or chili oil
- 1/2 tsp flaky sea salt
- 2 Tbsp fresh cilantro leaves
- 1 tsp toasted sesame seeds
Instructions
- 1Bring a medium saucepan of water to a rolling boil over high heat. Using a slotted spoon, gently lower the four eggs into the water. Set a timer for exactly 6 minutes 30 seconds for jammy yolks.
- 2While the eggs cook, fill a bowl with ice water. When the timer ends, immediately transfer the eggs to the ice bath and chill for 2 minutes to stop the cooking.
- 3Toast the sourdough slices in a toaster or in a dry skillet over medium heat until deep golden and crisp on both sides, about 2 to 3 minutes total.
- 4Halve the avocados, remove pits, and scoop the flesh into a small bowl. Add lemon juice and kosher salt. Mash with a fork to a chunky-smooth consistency—leave some texture.
- 5Peel the soft-boiled eggs carefully under cool running water. The shells should slip off easily; pat dry with a paper towel.
- 6Spread the mashed avocado thickly and evenly over each toast slice, going all the way to the edges. Sprinkle with the remaining kosher salt and black pepper.
- 7Place two peeled eggs on each avocado toast. Use a sharp knife to slice each egg in half so the jammy yolk spills slightly onto the avocado.
- 8Drizzle chili crisp generously over the eggs and avocado. Finish with flaky sea salt, cilantro leaves, and a sprinkle of sesame seeds. Serve immediately while the toast is still crisp and the yolks warm.
