
Slow-Cooker Spiced Bean and Egg Shakshuka
Shakshuka, often linked to North African and Middle Eastern kitchens, means a lively “mixture” of eggs nestled in spiced tomato sauce. This slow-cooker take folds in chickpeas and white beans so the stew thickens gently before the eggs poach on top.

Ingredients
- 28 oz canned crushed tomatoes
- 15 oz canned chickpeas, drained and rinsed
- 15 oz canned white beans, drained and rinsed
- 1 large yellow onion, diced
- 1 red bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp extra-virgin olive oil
- 6 large eggs
- 4 oz feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- for serving warm flatbread or crusty bread
Instructions
- 1Add crushed tomatoes, chickpeas, white beans, diced onion, diced bell pepper, minced garlic, tomato paste, cumin, smoked paprika, coriander, cayenne, salt, black pepper, and olive oil to a 5- or 6-quart slow cooker. Stir until the spices bloom into the tomato base.
- 2Cover and cook on LOW for 5 to 6 hours or on HIGH for 2 1/2 to 3 hours, until the sauce is thick, fragrant, and the peppers are soft. Give the mixture a stir and taste for salt.
- 3Using the back of a spoon, make six shallow wells in the surface of the bean-tomato stew. Crack one egg into each well, taking care not to break the yolks.
- 4Cover again and cook on HIGH for 20 to 35 minutes, checking early, until the egg whites are just set and the yolks remain soft and jammy. Avoid overcooking or the yolks will firm up.
- 5Turn off the slow cooker. Scatter crumbled feta and chopped parsley over the top so the cheese softens slightly in the residual heat.
- 6Spoon one egg with plenty of spiced beans and sauce into each bowl. Serve with warm flatbread or crusty bread for scooping, and finish with an extra grind of black pepper if desired.
