  • 1 1/2 lb baby potatoes, diced small
  • 2 cups sweet corn kernels
  • 2 cups heirloom tomatoes, chopped
  • 1 medium red onion, sliced
  • 4 large eggs
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh basil or chives
  • 1/2 cup feta cheese, crumbled
  • optional hot sauce

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easier cleanup. Toss the diced potatoes with most of the olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  2. 2Spread the potatoes in a single layer on the pan. Roast 15 minutes until the edges start to turn golden and a fork meets light resistance.
  3. 3Pull the pan out and scatter the sweet corn kernels and sliced red onion over the potatoes. Drizzle with the remaining oil and toss gently right on the pan. Return to the oven for 10 minutes until the corn chars in places and onions soften.
  4. 4Remove the pan again. Nestle the chopped heirloom tomatoes into open spots. Use a spoon to create four shallow wells in the hash. Crack one egg into each well, keeping yolks intact.
  5. 5Season the egg whites lightly with salt. Return the pan to the oven and bake 7 to 9 minutes, until the whites are just set and the yolks are still runny, or longer if you prefer firmer yolks. Watch closely in the last minutes.
  6. 6Remove the sheet pan carefully. Crumble feta over the hot hash so it softens, then scatter torn basil or snipped chives across the top.
  7. 7Divide the hash and eggs among four plates straight from the pan. Finish with hot sauce at the table if you like heat.
