Ingredients

  • 2 cups cherry or grape tomatoes
  • 8 large eggs
  • 1 cup full-fat cottage cheese
  • 1/3 cup torn fresh basil leaves
  • 2 garlic cloves
  • 3/4 cup shredded mozzarella
  • 1 tbsp olive oil
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 cup grated Parmesan

Instructions

  1. 1Preheat the oven to 400°F and line a rimmed half-sheet pan with parchment for easy cleanup. Halve the cherry tomatoes and mince the garlic.
  2. 2Toss the halved tomatoes and garlic on the pan with olive oil, half the salt, black pepper, and red pepper flakes. Roast for 10 to 12 minutes until the tomatoes blister, collapse, and release sweet juices.
  3. 3While the tomatoes roast, whisk the eggs in a large bowl until uniform. Stir in the cottage cheese, remaining salt, torn basil, and most of the mozzarella until the curds are evenly distributed.
  4. 4Remove the pan from the oven and carefully pour off any excess watery liquid if the tomatoes released a lot of juice. Scatter the roasted tomatoes evenly across the pan.
  5. 5Gently pour the egg-cottage cheese mixture over and the tomatoes, nudging with a spatula so it settles into an even layer half an inch thick. Sprinkle the remaining mozzarella and all the Parmesan on top.
  6. 6Return the pan to the oven and bake until the eggs are fully set, puffed at the edges, and lightly golden on top, 14 to 18 minutes. A knife inserted in the center should come out clean.
  7. 7Let the sheet pan rest for 3 minutes so the eggs firm up for clean cuts. Slice into eight squares or rectangles. Serve two per person, spooning any tomato juices from the pan over the top. Extra portions reheat well for weekday mornings.
