  • 12 oz bulk or links, casings removed breakfast sausage
  • 1 lb, diced small Yukon Gold potatoes
  • 1 large, cored and diced Honeycrisp or Gala apple
  • 1 small, diced yellow onion
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 large eggs
  • 1 tbsp butter
  • 2 tbsp chopped fresh chives or parsley

Instructions

  1. 1Dice the potatoes into 1/2-inch cubes and the apple into similar-size pieces so everything cooks at the same rate. Dice the onion.
  2. 2Heat a 12-inch cast-iron skillet over medium-high heat. Add the sausage and cook, breaking it into crumbles with a wooden spoon, until browned and cooked through, 5 to 6 minutes. Transfer to a plate, leaving the drippings.
  3. 3Add the olive oil to the same skillet if needed. Tip in the potatoes and spread them in an even layer. Cook undisturbed for 4 minutes to develop a golden crust.
  4. 4Stir the potatoes, then add the onion. Continue cooking, stirring every couple of minutes, until the potatoes are tender and deeply browned, about 8 minutes more.
  5. 5Add the diced apple, thyme, smoked paprika, salt, and pepper. Cook, stirring, until the apple softens slightly but still has bite and smells fragrant, 3 to 4 minutes.
  6. 6Return the cooked sausage to the skillet and toss everything together. Taste and adjust seasoning. Keep the hash warm over low heat.
  7. 7In a separate nonstick skillet, melt the butter over medium heat. Crack in the eggs and cook until the edges turn lacy and crisp while the yolks stay runny, 3 to 4 minutes.
  8. 8Spoon the hot apple-sausage hash onto four plates. Top each serving with two crispy-edged eggs.
  9. 9Scatter chopped chives or parsley over the top and offer hot sauce at the table.
