  • 2 cups old-fashioned rolled oats
  • 2 cups milk of choice
  • 1 cup plain Greek yogurt
  • 1/3 cup plus 2 tbsp creamy peanut butter
  • 2 tbsp chia seeds
  • 3 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/8 tsp pinch of salt
  • 2 ripe bananas
  • 1/4 cup dark chocolate chips
  • 1 tsp coconut oil
  • 2 tbsp optional chopped roasted peanuts

Instructions

  1. 1In a large mixing bowl combine the rolled oats, milk, Greek yogurt, peanut butter, chia seeds, maple syrup, vanilla, and salt. Whisk thoroughly until the peanut butter is fully incorporated and no dry pockets of oats remain.
  2. 2Taste the mixture and add an extra teaspoon of maple if you prefer it sweeter; it will taste slightly less sweet once chilled. Divide the oat mixture evenly among four 12-ounce jars or airtight containers.
  3. 3Peel and slice one banana into thin rounds. Press a few slices down into each jar so they are submerged in the oats; this keeps them from browning overnight.
  4. 4Seal the jars and refrigerate for at least 6 hours or up to 4 days. The oats will soften, the chia will thicken the mixture into a pudding-like texture, and the flavors will meld.
  5. 5In the morning, melt the chocolate chips with the coconut oil in a small microwave-safe bowl in 20-second bursts, stirring between each, until smooth and pourable, about 40–60 seconds total.
  6. 6Stir the remaining peanut butter until loosened; if needed, microwave 10 seconds. Slice the second banana just before serving.
  7. 7Open each jar, give the oats a quick stir, then top with fresh banana slices, a drizzle of the melted peanut butter, a zigzag of chocolate, and a sprinkle of chopped peanuts if using.
