Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups plain Greek yogurt
  • 1 1/2 cups unsweetened almond milk
  • 2 scoops (about 1/2 cup) vanilla protein powder
  • 2 large ripe peaches
  • 1/4 cup almond butter
  • 2 tbsp chia seeds
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 pinch of kosher salt
  • 1/4 cup sliced almonds
  • for topping extra peach slices

Instructions

  1. 1Dice one peach into small pieces and thinly slice the second peach for topping; set the slices aside in the fridge. In a large mixing bowl combine the oats, Greek yogurt, almond milk, protein powder, chia seeds, maple syrup, vanilla, cinnamon, and salt.
  2. 2Whisk vigorously for a full minute until the protein powder is fully dissolved and no dry pockets remain. The mixture should look thick but still pourable.
  3. 3Fold in the diced peach so the fruit is evenly distributed. Taste and add a drizzle more maple if you prefer sweeter oats.
  4. 4Divide the mixture among four 12-ounce jars or meal-prep containers. Tap each jar gently on the counter to settle the oats.
  5. 5Warm the almond butter for 10 seconds in the microwave so it loosens, then swirl a spoonful into the top of each jar without fully mixing.
  6. 6Seal the jars and refrigerate at least 6 hours or overnight. The oats will thicken and the peaches will soften into the mixture.
  7. 7In the morning, give each jar a quick stir. Top with the reserved peach slices and a sprinkle of sliced almonds for crunch.
  8. 8Eat cold straight from the jar for true grab-and-go, or warm gently in the microwave for 45 seconds if you prefer a cozy texture. Keeps 4 days refrigerated.
