Ingredients
- 2 cups old-fashioned rolled oats
- 1 1/2 cups plain Greek yogurt
- 1 1/2 cups unsweetened almond milk
- 1/2 cup vanilla protein powder
- 2 cups ripe peaches, diced
- 1/4 cup natural almond butter
- 2 Tbsp chia seeds
- 2 Tbsp honey or maple syrup
- 1 tsp ground cinnamon
- 1 pinch of salt
- 1/4 cup sliced almonds for topping
Instructions
- 1In a large bowl or four individual jars, stir together the rolled oats, Greek yogurt, almond milk, and protein powder until no dry clumps of powder remain.
- 2Add the chia seeds, honey, cinnamon, and pinch of salt, mixing thoroughly so the chia is evenly suspended.
- 3Fold in most of the diced peaches, reserving a handful for topping in the morning; the fruit will soften and sweeten the oats overnight.
- 4Divide the mixture evenly among four jars or containers, then swirl a spoonful of almond butter into the center of each portion.
- 5Seal the jars and refrigerate for at least 6 hours or overnight until the oats are creamy and fully hydrated.
- 6In the morning, give each jar a quick stir; if the mixture is thicker than you like, loosen with a splash of almond milk.
- 7Top with the reserved fresh peach dice and a sprinkle of sliced almonds for crunch.
- 8Eat cold straight from the jar for a no-cook weekday breakfast that travels well in lunch bags.
