- 2 cups full-fat cottage cheese
- 2 large ripe peaches
- 2 Tbsp honey
- 1/4 cup sliced almonds
- 1 Tbsp chia seeds
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 2 Tbsp fresh mint leaves
- 1 tsp lemon zest
- 1/4 tsp flaky sea salt
Instructions
- 1If the almonds are raw, toast them in a dry skillet over medium heat for 3 to 4 minutes, shaking often, until fragrant and golden; transfer to a plate to cool.
- 2Wash and pit the peaches, then slice them into thin wedges; reserve a few pretty slices for garnish and dice the rest.
- 3Divide the cottage cheese between two bowls. Drizzle each portion with a little honey and stir in the vanilla and cinnamon so the cheese becomes lightly sweet and aromatic.
- 4Fold most of the diced peaches into the cottage cheese along with the chia seeds and lemon zest, leaving some fruit for the top.
