Ingredients
- 1 1/2 lb heirloom tomatoes
- 1 can (15 oz) canned cannellini beans
- 8 oz fresh mozzarella balls or burrata
- 2 ripe avocado
- 8 slices crusty bread or toast
- 3 Tbsp extra-virgin olive oil
- 1/2 cup fresh basil leaves
- 1 lemon
- 3/4 tsp kosher salt
- 1/2 tsp flaky sea salt
- 1/2 tsp chili flakes
- 1/4 tsp black pepper
- 1 Tbsp honey
Instructions
- 1Drain and rinse the cannellini beans thoroughly. Place them in a bowl and toss with a spoonful of olive oil, a squeeze of lemon juice, kosher salt, and a few torn basil leaves.
- 2Slice the heirloom tomatoes into thick rounds and wedges of different colors. Arrange them on a large platter or four individual boards, seasoning lightly with flaky salt and black pepper.
- 3Tear or slice the mozzarella and nestle pieces among the tomatoes. Halve, pit, and slice the avocados; fan the slices onto the boards and finish with a squeeze of lemon so they stay bright.
- 4Spoon the dressed white beans into small piles or ramekins on each board for easy scooping.
- 5Toast or warm the bread if desired, then drizzle the remaining olive oil over the tomatoes, cheese, and beans.
- 6Scatter the rest of the basil leaves generously across everything. Add a light sprinkle of chili flakes and a final tiny drizzle of honey over the tomatoes and cheese for sweet-heat contrast.
- 7Set out the boards with the toast on the side so everyone can build open-faced bites. Serve cool or at room temperature—no stove required.
