Ingredients
- 2 scoops (about 60 g) vanilla whey protein powder
- 1/2 cup old-fashioned oats
- 2 large eggs
- 1/3 cup unsweetened almond milk
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 ripe banana
- 1 tsp coconut oil
- 1/2 cup fresh berries
- 2 tbsp sugar-free maple syrup
Instructions
- 1Add the oats to a blender and pulse into a fine flour, about 20 seconds.
- 2Add the protein powder, eggs, almond milk, baking powder, cinnamon, and the half banana to the blender.
- 3Blend on high until the batter is completely smooth and slightly thick, 30 to 45 seconds; let it rest 2 minutes so it thickens further.
- 4Heat a nonstick skillet or griddle over medium heat (about 350°F surface temperature) and lightly brush with coconut oil.
- 5Pour roughly 1/4-cup portions of batter onto the hot surface, spacing them so they do not touch.
- 6Cook until bubbles form across the surface and the edges look set and matte, 2 to 3 minutes.
- 7Flip carefully with a thin spatula and cook the second side until golden brown and springy to the touch, another 1 to 2 minutes.
- 8Transfer finished pancakes to a plate and keep warm while you cook the remaining batter, re-oiling the pan lightly between batches if needed.
- 9Stack three pancakes per serving, top with fresh berries, and drizzle with sugar-free maple syrup.
- 10Leftover pancakes freeze well between parchment sheets for quick weekday muscle breakfasts—reheat in a toaster or microwave.
