
Middle Eastern Heirloom Tomato Shakshuka with Warm Pita

Ingredients
- 2 lb heirloom tomatoes
- 8 large eggs
- 1 medium yellow onion
- 1 red bell pepper
- 4 garlic cloves
- 3 tbsp extra-virgin olive oil
- 1.5 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1.25 tsp kosher salt
- 1/2 tsp black pepper
- 4 oz feta cheese
- 1/4 cup fresh parsley
- 4 pita breads
- 1/4 tsp crushed red pepper
Instructions
- 1Dice the onion and red bell pepper into small pieces. Mince the garlic. Core and chop the heirloom tomatoes into rough 3/4-inch chunks, reserving all juices.
- 2Heat the olive oil in a deep 12-inch skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened and lightly golden, 6 to 7 minutes.
- 3Stir in the garlic, cumin, smoked paprika, coriander, salt, black pepper, and crushed red pepper. Cook just until the spices bloom and smell fragrant, about 30 seconds.
- 4Add the chopped tomatoes with their juices. Bring to a lively simmer, then reduce heat to medium-low and cook uncovered until the mixture thickens into a rich, chunky sauce that holds a spoon trail, 10 to 12 minutes.
- 5Use the back of a spoon to make eight shallow wells in the sauce. Crack one egg into each well. Sprinkle the feta evenly over the surface.
- 6Cover the skillet and cook until the egg whites are fully set but the yolks remain soft and jammy, 5 to 7 minutes. Avoid overcooking; the residual heat will finish them.
- 7Meanwhile warm the pita breads in a dry skillet or low oven until soft and steamy. Chop the parsley.
- 8Remove the lid, scatter parsley over the shakshuka, and bring the skillet to the table. Serve family-style with warm pita for scooping up sauce and runny yolks.
