  • 1 1/2 cups unsweetened coconut milk
  • 2 scoops (about 60 g) vanilla protein powder
  • 1 large, diced (about 1 1/2 cups) ripe mango
  • 2 tbsp unsweetened shredded coconut
  • 1 tsp lime zest
  • 1/8 tsp pinch of salt

Instructions

  1. 1In a medium mixing bowl whisk the chia seeds with the coconut milk until no dry clumps remain.

  6. 6Seal the jars and refrigerate for at least 4 hours or overnight until the chia seeds swell and the pudding sets to a thick spoonable texture.
