
Meal-Prep Bacon Cheddar Egg Bites

Ingredients
- 6 slices thick-cut bacon
- 8 large eggs
- 1 cup full-fat cottage cheese
- 1 cup shredded sharp cheddar
- 1/4 cup whole milk or half-and-half
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 3 green onions, thinly sliced

Instructions
- 1Preheat the oven to 300°F and place a kitchen towel or silicone mat on a rimmed baking sheet. Fill a second baking dish or large pan with 1 inch of hot water and set it on the lower oven rack to create a steam bath.
- 2Cook the bacon in a skillet over medium heat until crisp, 8 to 10 minutes, turning once. Drain on paper towels, then chop into small bits.
- 3Lightly spray a 12-cup silicone muffin pan (or metal pan lined with parchment cups) with nonstick spray so the bites release cleanly.
- 4In a blender combine the eggs, cottage cheese, milk, salt, pepper, and garlic powder. Blend on high for 20–30 seconds until completely smooth and slightly frothy—no cottage-cheese curds should remain.
- 5Stir the shredded cheddar, chopped bacon, and most of the green onions into the blended egg mixture by hand so the mix-ins stay evenly distributed.
- 6Divide the mixture evenly among the 12 muffin cups, filling each three-quarters full. Sprinkle the remaining green onions on top.
- 7Set the filled muffin pan on the prepared baking sheet and carefully place it on the middle oven rack above the water pan. Bake until the egg bites are just set in the centers and lightly golden on top, 25 to 30 minutes. A toothpick inserted should come out clean.
- 8Cool in the pan for 5 minutes, then gently loosen and transfer to a wire rack. Enjoy warm right away, or cool completely, store in an airtight container in the fridge up to 4 days, and reheat 30–45 seconds in the microwave.
