Ingredients

  • 12 oz breakfast sausage links or bulk
  • 6 large eggs
  • 2 tbsp milk
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 flour tortillas (8-inch)
  • 1 1/2 cups shredded pepper jack cheese
  • 2 tbsp, plus more for dipping pure maple syrup
  • 1 tbsp unsalted butter or oil
  • 2, thinly sliced green onions
  • optional, for serving hot sauce

Instructions

  1. 1Cook sausage in a large skillet over medium heat, breaking it into small crumbles if using bulk, until browned and cooked through, 6–8 minutes. Drain excess fat and stir in maple syrup; cook 30 seconds more so it glazes. Transfer sausage to a plate.
  2. 2In a bowl whisk eggs, milk, salt, and pepper. Pour into the same skillet over medium-low heat and scramble gently, pushing curds from the edges toward the center, until just set but still soft and glossy, about 2–3 minutes. Remove from heat.
  3. 3Lay tortillas flat. On one half of each tortilla sprinkle a layer of pepper jack, then top with scrambled eggs, maple sausage, green onions, and another sprinkle of cheese. Fold the empty half over to close.
  4. 4Wipe the skillet clean and melt half the butter over medium heat. Place two quesadillas in the pan and cook until the underside is deep golden and crisp and cheese begins to melt, 2 1/2–3 minutes.
  5. 5Flip carefully and cook the second side until equally golden and the cheese is fully melted and stretchy, another 2–3 minutes. Repeat with remaining butter and quesadillas.
  6. 6Transfer to a cutting board, rest 1 minute, then slice each into 3 wedges with a sharp knife or pizza cutter.
  7. 7Serve hot with extra maple syrup for dipping and hot sauce on the side if you like heat.
