
Late-Summer Charred Corn Basil Shakshuka
Shakshuka, the North African classic of eggs poached in spiced tomatoes, takes a late-summer turn in this skillet. Charred sweet corn and fresh basil brighten the sauce, finished with crumbled feta for an easy brunch.

Ingredients
- 3 ears fresh sweet corn
- 1 1/2 lb, chopped heirloom tomatoes
- 1 medium, diced yellow onion
- 4, minced garlic cloves
- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 8 large eggs
- 1/2 cup torn fresh basil
- 1/2 cup crumbled feta cheese
- for serving crusty bread
Instructions
- 1Shuck the corn and cut the kernels from the cobs. Heat olive oil in a 12-inch cast-iron or heavy skillet over high heat until nearly smoking.
- 2Add the corn kernels in a single layer and cook without stirring for 2 minutes to develop deep char. Toss once and char another 90 seconds, then transfer to a plate.
- 3Lower heat to medium and add the remaining olive oil. Sauté the diced onion until soft and golden at the edges, about 5 minutes. Stir in the minced garlic, cumin, and smoked paprika and cook until fragrant, 30 seconds.
- 4Add the chopped heirloom tomatoes, salt, and black pepper. Simmer, stirring occasionally and pressing some tomatoes with the back of a spoon, until the mixture thickens into a rich sauce and most liquid evaporates, 10 to 12 minutes.
- 5Fold the charred corn and half the torn basil back into the tomato sauce. Taste and adjust seasoning if needed.
- 6Use a spoon to make eight small wells in the sauce. Crack one egg into each well. Cover the skillet and cook over medium-low heat until the whites are set but yolks are still jammy, 5 to 7 minutes.
- 7Remove from heat, scatter crumbled feta and the remaining basil over the top, and let rest 1 minute so the cheese softens.
- 8Serve straight from the skillet with thick slices of crusty bread for scooping up the sauce and runny yolks.
