Ingredients

  • 2 large ripe avocados
  • 4 oz smoked salmon slices
  • 2 large soft-boiled or jammy eggs
  • 2 tsp everything bagel seasoning
  • 2 tbsp fresh dill
  • 1 tbsp lemon juice
  • 1/4 tsp black pepper
  • 1 tsp olive oil drizzle

Instructions

  1. 1Bring a small saucepan of water to a gentle boil, lower in the eggs, and cook exactly 7 minutes for jammy yolks, then transfer to an ice bath to stop the cooking.
  2. 2Halve the avocados lengthwise, remove the pits, and scoop a little extra flesh from the centers to create deeper boats that hold the toppings.
  3. 3Brush or squeeze lemon juice over the cut avocado surfaces so they stay bright green and gain a fresh tang.
  4. 4Fold or roll the smoked salmon slices and nestle them into each avocado half, creating a soft savory bed.
  5. 5Peel the cooled eggs carefully, slice them in half, and place one jammy half into each avocado boat so the yolk can spill slightly when eaten.
  6. 6Sprinkle everything bagel seasoning generously over the salmon and eggs, then crack black pepper on top.
  7. 7Tear fresh dill fronds over the boats and finish with a light drizzle of olive oil for richness.
  8. 8Serve immediately on small plates while the eggs are still slightly warm and the avocado is cool and creamy.
  9. 9Eat with a spoon, scooping through salmon, egg, and avocado in every bite for a complete keto breakfast.
