Japanese Tamago Sandwich Classic Swap

Japanese Tamago Sandwich Classic Swap

In Japan, the tamago sando is a beloved konbini classic: creamy mashed eggs folded with Japanese mayonnaise between pillowy soft white bread. A gentle touch of sugar and salt keeps the filling delicately sweet and savory.

Ingredients

  • 6 large eggs
  • 3 tbsp Japanese mayonnaise (or regular mayo)
  • 2 tbsp milk
  • 1 tsp sugar
  • 1/2 tsp salt
  • 4 slices soft white sandwich bread (shokupan-style if possible)
  • 1 tbsp unsalted butter
  • 1 tbsp chopped (optional) chives or parsley

Instructions

  1. 1Bring a medium saucepan of water to a rolling boil, then gently lower in the eggs and boil for exactly 8 minutes for creamy, jammy yolks that mash well.
  2. 2Transfer the eggs immediately to an ice bath and cool for 5 minutes so the shells peel cleanly.
  3. 3Peel the eggs, place them in a bowl, and mash with a fork until mostly smooth with a few soft chunks remaining.
  4. 4Stir in the Japanese mayonnaise, milk, sugar, and salt until the mixture is creamy, slightly glossy, and well seasoned; taste and adjust salt if needed.
  5. 5Lightly butter one side of each bread slice.
  6. 6Divide the egg salad evenly between two slices of bread (butter side out if toasting, or butter side in for classic soft style), spreading it thick and edge to edge like a true Japanese convenience-store sandwich.
  7. 7Top with the remaining bread slices and gently press. For the classic look, trim the crusts with a sharp knife, then cut each sandwich diagonally into neat triangles.
  8. 8Optional: toast the buttered sandwiches in a skillet over medium heat for 1 to 2 minutes per side until barely golden, sprinkle with chives, and serve at once while the filling is cool and creamy against the soft bread.
