- 4 slices soft white sandwich bread
- 4 large eggs
- 2 tbsp whole milk
- 1 tsp sugar
- 1 tsp soy sauce
- 1 1/2 tbsp butter
- 2 tbsp Japanese mayonnaise
- 1 tbsp fresh chives
- 1/4 tsp kosher salt
- 2 small nori seaweed snack sheets
- 1/2 small cucumber
Instructions
- 1Whisk the eggs, milk, sugar, soy sauce, and salt in a bowl until the mixture is uniform and slightly frothy—no streaks of white remaining. Finely snip the chives and set aside.
- 2Slice the cucumber into thin matchsticks and pat dry. If the bread crusts are thick, trim them for the classic neat rectangle look, or leave them on for a heartier sandwich.
- 3Melt most of the butter in a nonstick skillet over low-to-medium-low heat. Pour in the egg mixture and let it sit undisturbed for 15–20 seconds until the edges just begin to set.
- 4Using a spatula, make slow, gentle folds from the edge toward the center, creating large, custardy curds. Keep the heat low so the eggs stay glossy and soft rather than browned or dry.
- 5When the eggs are still slightly wet and jiggly, remove the pan from heat; residual heat will finish them to a creamy, pudding-like scramble. Fold in the chives and the remaining butter for shine.
- 6Spread a thin layer of Japanese mayonnaise on one side of each bread slice. Lay a small nori sheet on two of the slices if using, then pile the warm soft eggs evenly on top.
