Ingredients
- 4 large eggs
- 2 large whole-wheat tortillas or thin rotis
- ⅓ cup finely chopped red onion
- ⅓ cup finely chopped tomato
- 1 finely chopped green chili
- 3 tbsp chopped fresh cilantro
- ¼ tsp ground turmeric
- ½ tsp ground cumin
- ½ tsp garam masala
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp neutral oil or ghee
- ¼ cup plain Greek yogurt
Instructions
- 1In a medium bowl, crack the eggs and beat them lightly with turmeric, cumin, garam masala, salt, and black pepper until the spices are fully blended and the mixture is uniform.
- 2Stir in the chopped red onion, tomato, green chili, and most of the cilantro, reserving cilantro for garnish.
- 3Heat half the oil or ghee in a nonstick skillet over medium heat until shimmering.
- 4Pour in half the egg mixture and swirl the pan so it spreads into a thin, even circle. Cook undisturbed for 1–2 minutes until the bottom is set and golden in spots.
- 5Gently fold the omelette in half or into thirds and cook another 30–45 seconds so the interior finishes without drying out. Transfer to a plate and repeat with the remaining oil and egg mixture.
- 6Warm the tortillas or rotis in the same dry skillet for 20–30 seconds per side until soft and pliable.
- 7Spread a thin layer of Greek yogurt down the center of each warm wrap.
- 8Place one folded masala omelette on top of the yogurt, sprinkle with the reserved cilantro, and fold the sides in before rolling tightly into a wrap.
- 9Slice each wrap in half on the diagonal if desired and serve immediately while the omelette is still hot and the spices aromatic.
- 10For meal prep, cook the omelettes ahead, refrigerate, and reheat gently before assembling fresh wraps.
