Ingredients
- 4 corn tortillas
- 8 large eggs
- 2 cups fresh sweet corn kernels
- 1 lb diced heirloom tomatoes
- 1/2 medium diced white onion
- 1 minced jalapeño
- 2 minced garlic cloves
- 1/4 cup chopped fresh cilantro
- 1 lime
- 1 cup refried black beans
- 1/4 cup crumbled cotija cheese
- 1 sliced ripe avocado
- 3 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp hot honey
Instructions
- 1Warm a large 12-inch cast-iron skillet over medium-high heat and add a drizzle of olive oil. Add the sweet corn kernels in a single layer and let them sit undisturbed for 2 to 3 minutes until the bottoms char and smell toasty, then stir and cook another minute until bright and lightly blistered.
- 2Transfer the charred corn to a bowl. In the same skillet, lower heat to medium and add a bit more oil along with the onion and jalapeño; cook 3 to 4 minutes until the onion softens and turns translucent at the edges.
- 3Stir in the garlic, chili powder, and cumin and cook just 30 seconds until fragrant. Add the diced heirloom tomatoes and salt; simmer 4 to 5 minutes, stirring occasionally, until the tomatoes release juices and form a chunky salsa that still holds some fresh pieces.
- 4Squeeze in half the lime juice and fold most of the cilantro into the tomato mixture. Taste and adjust salt, then scoop the warm salsa into a serving bowl and wipe the skillet clean.
- 5Return the skillet to medium heat with a thin film of oil. Warm the corn tortillas one or two at a time for about 30 seconds per side until pliable and lightly spotted, then stack them on a plate under a clean towel.
- 6Spread a spoonful of warm refried black beans over each tortilla. In the same skillet, heat remaining oil over medium and crack in the eggs; cook 2 to 3 minutes for sunny-side-up with set whites and runny yolks, seasoning lightly with salt and pepper. Cover briefly if you prefer firmer whites.
- 7Place two eggs on each bean-topped tortilla. Spoon the heirloom tomato salsa generously over and the eggs, then scatter the reserved charred corn on top.
- 8Finish each plate with avocado slices, crumbled cotija, remaining cilantro, a final squeeze of lime, and a zigzag of hot honey. Serve immediately while the yolks are still glossy and the tortillas are warm.
