Ingredients

  • 1 can (8 count) refrigerated buttermilk biscuits
  • 4 large eggs
  • 2 medium heirloom tomatoes
  • 1 cup fresh sweet corn kernels
  • 3 tbsp unsalted butter
  • 3 tbsp hot honey
  • 4 slices sharp cheddar cheese
  • 2 tbsp chopped fresh chives
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp neutral oil

Instructions

  1. 1Preheat the oven according to the biscuit package directions, usually around 375°F. Separate the biscuits and arrange them on a parchment-lined baking sheet, then bake until deeply golden and cooked through.
  2. 2While the biscuits bake, heat a large cast-iron or nonstick skillet over medium-high heat. Add a thin film of oil and the fresh corn kernels. Cook without stirring for 2 minutes so the kernels char and blister, then toss and cook another 1–2 minutes until sweet and lightly blackened in spots. Transfer the corn to a bowl.
  3. 3Slice the heirloom tomatoes into thick rounds and season both sides lightly with salt and pepper. Set aside so they release a little juice and come to room temperature.
  4. 4Wipe the skillet, reduce heat to medium, and melt half the butter. Crack in the eggs and cook sunny-side up or over-easy until the whites are fully set but yolks remain runny, about 3–4 minutes; season with salt and pepper.
  5. 5Split the warm biscuits horizontally. Spread the remaining butter on the cut sides and toast them cut-side down in the hot skillet for 30–45 seconds until lightly crisp and fragrant.
  6. 6Build each sandwich: place a cheese slice on the bottom biscuit half so it begins to melt from the residual heat. Layer on a tomato round, a spoonful of charred corn, and a fried egg.
  7. 7Drizzle hot honey generously over the egg and corn so it pools into the yolk and tomato juices. Sprinkle with chopped chives.
  8. 8Cap with the biscuit top, press gently, and serve immediately while the biscuit is still warm and the honey is glossy. Pair with coffee for a fast back-to-school morning.
