  • 4 English muffins, split
  • 4 large eggs
  • 8 slices thick-cut bacon
  • 2 medium heirloom tomatoes, sliced
  • 4 sharp cheddar cheese slices
  • 3 tbsp hot honey
  • 2 tbsp mayonnaise
  • 1 tbsp unsalted butter
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 8 fresh basil leaves

Instructions

  1. 1Preheat a large skillet or griddle over medium heat. Cook the bacon until crisp and rendered, about 8 to 10 minutes, flipping once; transfer to a paper-towel-lined plate and pour off most of the fat, leaving a thin film.
  2. 2While the bacon cooks, lightly toast the split English muffins in a toaster or cut-side down in a dry skillet until golden. Spread a thin layer of mayonnaise on the cut sides.
  3. 3In the same skillet over medium heat, melt the butter. Crack in the eggs and cook sunny-side up or over-easy until whites are fully set and edges are lacy, about 3 minutes; season with salt and pepper.
  4. 4In the last minute of egg cooking, lay a slice of cheddar over each egg so it melts slightly from the residual heat.
  5. 5Arrange the bottom muffin halves on plates. Layer each with two slices of crisp bacon, a melted-cheese egg, and two thick slices of ripe heirloom tomato.
  6. 6Drizzle hot honey generously over the tomato and egg so it drips into the nooks of the muffin. Add a couple of fresh basil leaves for brightness.
