Ingredients
- 2 1/2 cups old-fashioned rolled oats
- 2 scoops (about 1/2 cup) vanilla protein powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp kosher salt
- 3 medium (about 1 1/4 cups) ripe bananas, mashed
- 2 large eggs
- 1 3/4 cups unsweetened almond milk or dairy milk
- 1/4 cup maple syrup
- 2 tsp vanilla extract
- 1/2 cup chopped walnuts or pecans
- 1/3 cup dark chocolate chips (optional)
Instructions
- 1Preheat the oven to 375°F. Lightly grease an 8×8-inch or 9×9-inch baking dish with cooking spray or butter.
- 2In a large bowl whisk the oats, protein powder, baking powder, cinnamon, and salt until evenly combined and no protein-powder clumps remain.
- 3In a separate bowl mash the bananas until mostly smooth with a few small chunks. Whisk in the eggs, milk, maple syrup, and vanilla until fully blended.
- 4Pour the wet mixture into the dry ingredients and stir with a spatula until every oat is moistened; the batter will be thick but pourable. Fold in half the nuts and optional chocolate chips.
- 5Scrape the batter into the prepared dish and smooth the top. Sprinkle remaining nuts (and chips) evenly over the surface and gently press them in.
- 6Bake 32–38 minutes until the center is set, the edges are golden brown, and a toothpick inserted in the middle comes out with just a few moist crumbs. The top should spring back lightly when touched.
- 7Cool in the pan on a wire rack for at least 10 minutes so slices hold together. Cut into 6 squares.
- 8Serve warm as-is, or with a spoonful of Greek yogurt and an extra drizzle of maple. Leftovers keep covered in the fridge up to 5 days; reheat individual portions 45–60 seconds in the microwave.
