Ingredients

  • 4 ripe peaches
  • 3 cups full-fat cottage cheese
  • 1/4 cup hot honey
  • 1/3 cup sliced almonds
  • 1 cup fresh blueberries
  • 1 tbsp olive oil
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp flaky sea salt
  • 2 tbsp fresh mint leaves
  • 1/2 cup granola

Instructions

  1. 1Preheat a grill pan or outdoor grill to medium-high heat, about 400°F. Halve the peaches and remove the pits. Brush the cut sides lightly with olive oil.
  2. 2Place the peach halves cut-side down on the hot grill. Cook undisturbed for 3 to 4 minutes until deep grill marks appear and the fruit softens and caramelizes. Flip and warm the skin side for 1 minute more. Transfer to a cutting board.
  3. 3While the peaches rest, stir the cottage cheese with the vanilla extract and cinnamon in a medium bowl until creamy. Divide the cottage cheese among four serving bowls.
  4. 4Slice the grilled peaches into wedges. Arrange the warm peach slices over the cottage cheese in each bowl.
  5. 5Scatter fresh blueberries and sliced almonds over the peaches. Sprinkle a little extra cinnamon if desired.
  6. 6Warm the hot honey for 10 seconds in the microwave so it becomes pourable, then drizzle it generously over each bowl.
  7. 7Add a small handful of granola for crunch and finish with a tiny pinch of flaky sea salt to balance the sweetness.
  8. 8Tear fresh mint leaves over the top and serve immediately while the peaches are still warm against the cool cottage cheese.
