Ingredients
- 3 ripe peaches
- 3/4 cup fine cornmeal
- 3/4 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 large eggs
- 1 1/4 cups buttermilk
- 4 tbsp melted butter
- 3 tbsp honey
- 1 tsp hot sauce or chili flakes
- 1 tbsp neutral oil for griddle
- 1 tsp vanilla extract
Instructions
- 1Heat a grill pan or outdoor grill to medium-high. Halve and pit the peaches, then grill cut-side down 3 to 4 minutes until deep grill marks appear and the fruit softens slightly. Dice two peaches and slice the third for serving.
- 2In a large bowl whisk together cornmeal, flour, baking powder, and salt. In a separate bowl whisk eggs, buttermilk, half the melted butter, vanilla, and a spoonful of honey until smooth.
- 3Pour the wet mixture into the dry ingredients and stir gently until just combined; a few small lumps are fine. Fold in the diced grilled peaches. Let the batter rest 5 minutes so the cornmeal hydrates.
- 4Heat a large griddle or nonstick skillet over medium heat and lightly oil the surface. When a drop of water sizzles, scoop 1/4-cup portions of batter onto the griddle, spacing them apart.
- 5Cook 2 to 3 minutes until bubbles form across the surface and the edges look set. Flip and cook another 2 minutes until the undersides are golden brown and the centers spring back lightly.
- 6While pancakes cook, stir the remaining melted butter with the rest of the honey and the hot sauce or chili flakes until a pourable hot-honey butter forms.
- 7Stack the pancakes on warm plates. Top with the reserved grilled peach slices.
- 8Drizzle the hot-honey butter generously over each stack so it melts into the pancakes. Serve immediately while hot and fragrant.
