Ingredients

  • 4 ripe peaches, halved and pitted
  • 3 cups plain Greek yogurt
  • 3 tbsp honey
  • 1/4 cup fresh basil leaves
  • 1 cup granola
  • 1/3 cup sliced almonds
  • 1 tbsp olive oil or neutral oil
  • 1 tsp vanilla extract
  • 1 pinch of kosher salt
  • 1 tsp lemon juice
  • 2 tbsp chia seeds
  • optional garnish fresh mint leaves

Instructions

  1. 1Preheat a grill pan or outdoor grill to medium-high heat, about 400°F. Brush the cut sides of the peach halves lightly with oil so they do not stick.
  2. 2Place the peaches cut-side down on the hot grates. Grill without moving them for 3 to 4 minutes until deep grill marks appear and the fruit softens slightly. Flip and grill the skin side another 1 to 2 minutes. Transfer to a plate to cool just enough to handle.
  3. 3While the peaches rest, stir the Greek yogurt with the vanilla, salt, and honey until smooth and lightly sweetened. Taste and add more honey if you prefer it sweeter.
  4. 4Slice or roughly chop the grilled peaches, discarding any tough bits of skin if desired. Toss the warm peach pieces with the lemon juice and half of the torn basil so the herbs wilt into the fruit.
  5. 5Toast the sliced almonds in a dry skillet over medium heat until golden and fragrant, 2 to 3 minutes, shaking the pan often. Set aside to cool.
  6. 6Spoon the vanilla yogurt into four bowls. Nestle the grilled peach mixture on one side of each bowl.
  7. 7Scatter granola, toasted almonds, and chia seeds over the yogurt and fruit for crunch. Drizzle the remaining honey in thin ribbons across the top.
  8. 8Finish with the rest of the fresh basil and a few mint leaves if using. Serve right away while the peaches are still slightly warm against the cool yogurt.
