
Grilled Nectarine Yogurt Parfait

Ingredients
- 4 medium ripe nectarines
- 3 cups plain Greek yogurt
- 1 cup granola
- 3 tbsp honey
- 12 leaves fresh mint leaves
- 1 tsp orange zest
- 1 tsp vanilla extract
- 1 tsp olive oil or avocado oil
- 1/4 tsp pinch of flaky salt
Instructions
- 1Preheat a grill or grill pan to medium-high heat (400°F). Halve the nectarines, remove pits, and brush the cut sides lightly with oil.
- 2Place nectarines cut-side down on the hot grill. Cook undisturbed for 3–4 minutes until deep grill marks form and the fruit softens slightly and caramelizes. Flip and grill skin-side for 1 more minute, then transfer to a plate.
- 3While still warm, slice the grilled nectarines into wedges. Drizzle with honey and the orange zest; let them sit 5 minutes so the juices mingle and the aroma blooms.
- 4In a bowl, stir the Greek yogurt with vanilla extract and the remaining honey until smooth and lightly sweet.
- 5Spoon honeyed yogurt into the bottom of each of four parfait glasses or jars.
- 6Add a layer of grilled nectarine wedges (about 3–4 pieces), then sprinkle granola over the fruit.
- 7Repeat the layers once more: yogurt, nectarines, and a final sprinkle of granola. Finish with a few torn mint leaves and a tiny pinch of flaky salt on top.
- 8Serve immediately so the granola stays crunchy against the cool yogurt and warm-spiced grilled fruit. Perfect for a bright weekend brunch plate.
